This two-day lesson explores the multitude of ways of preserving, preparing and enjoying an iconic staple of the Sicilian kitchen: tomato.
Day one will focus on preserving tomatoes to enjoy year-round. We will make our famed salsa pronta (tomato sauce), polpa piu (jarred diced tomatoes) and spahetti picchio pacchio (a fresh tomato sauce).
Day two will be about how to enjoy the bounty of tomatoes at the moment with a recipe for pomodori ripieni (stuffed tomatoes) and gazpacho.
